About us
About us — The story of Lago Bakery
Lago Bakery is an artisan microbakery in the Ticino region of Switzerland. Every day we create handmade bread and pastries with local ingredients, sourdough starter and slow fermentation — no additives, no shortcuts.
Awilda Suero — founder and soul of Lago Bakery
Behind Lago Bakery is Awilda — journalist, mother and passionate cook with a multicultural soul. Raised between the Caribbean and Spain, fluent in Spanish, English and Italian, Awilda brought to Ticino a unique vision: baking that brings cultures together at the table.
Her journey into artisan baking began in her home kitchen, experimenting with recipes alongside her children. What started as a family activity — kneading dough, mixing flours, waiting for bread to rise — became a true calling.
Her philosophy is simple and uncompromising: everything from scratch, nothing artificial. No preservatives, no shortcuts, no ingredients she wouldn't give her own children. Just flour, water, patience and love.
Our philosophy
Cultures meeting in bread
Awilda draws inspiration from the culinary traditions she has encountered throughout her life — Mediterranean flavours, Caribbean aromas, Central European techniques — blending them with Ticino's local ingredients. The result is a microbakery that tastes of the world, rooted in Switzerland.
For her, healthy eating is not a trend but a way of life. Every recipe is born from the desire to nourish, not just feed. Every product is a small act of care for those who choose it.
Our values
What guides our work
Local Ingredients
We work with farmers and mills in Ticino to ensure fresh, traceable and highest-quality raw materials.
Craftsmanship
Every product is handcrafted, with slow and natural leavening. No additives, no shortcuts — just time and care.
Seasonality
Our menu follows the rhythm of nature. Every season brings new flavours, new inspirations and unique creations.
Our ingredients
Local ingredients — a real commitment, not a label
At Lago Bakery, "local" is not a marketing word — it's a concrete choice reflected in every loaf and every pastry. We favour flours from Swiss and Ticino mills, choose traceable and seasonal raw materials, and work with small local producers whenever possible.
Swiss and Ticino flours
Our flours come from selected Swiss and Ticino mills. No additives, no improvers — just grains grown and milled close to us.
Short supply chain
Knowing where ingredients come from means we can guarantee quality and freshness. Fewer kilometres between field and oven — more flavour on the plate.
Seasonal and natural
We follow the seasonality of Ticino. Seasonal products taste better, are more nutritious, and tell the story of this land in the most authentic way.
